Vitt's Recipe: Gluten-Free Elbow Pasta

Pasta is such a comfort food for many people, me included! I was craving something that was creamy, savory, filling yet healthy and totally satisfying. That is when I created this pasta; to make you feel comforted, yet still be healthy and vegan! Keep reading to learn more about my gluten-free elbow pasta with plant-based garlic and fennel sauce in a roasted red pepper sauce recipe.

You can eat this meal as a lunch or make it for a small dinner party you are hosting for the holidays! Trust me, your guests will LOVE this one.

Prep Time: 5 mins Cook Time: 30 mins 

Total Time: 35 minutes   Yield: 3-4 bowls 


Cook up the pasta according to package instructions. While the pasta is cooking, in a medium saucepan, put the avocado oil on medium heat. Once it warms up place the sausage in the pan and sauté for 5-7 minutes, or until brown and crispy. Set aside.

Drain out the pasta and set aside as well.

For the sauce, place all ingredients into a food processor (I have a Ninja) until completely smooth. Add as much salt and pepper as you would like.

Place sausage and sauce in with the drained pasta and mix it all together on low heat. Let simmer for about 5 minutes so all ingredients immerse together.

OPTION: Once placed inside the bowl, top it off with some vegan mozzarella shreds for extra cheesy taste!
